DEPOSITING:Generally, honey is kept at room temperature (+18-22°C) in tightly covered containers, in airy and shady places.
1. Shady place (away from direct sunlight)
Honey is sensitive to heat. Many of its ingredients such as enzymes, vitamins and amino-acids may vanish if it is exposed at over 40OC. Temperature of 18-20° C is recommended in order to keep the liquid honey. Lower temperature causes a more rapid crystallization. Temperature of 10-12° C allows keeping the honey cream-solid.
2. Tightly covered containers
Honey has a hygroscopic nature. This means that it naturally absorbs moisture in from the air. Therefore there is the risk of fermentation. This is the reason why honey must be kept in tightly covered containers.
3. Dark place
Honey is sensitive to sunlight because of an antibacterial substance which becomes less effective after a long exposure to it.
4. Well aired place
Honey absorbs moistures and strong tastes from the air easily. Because of this it has to be kept in tightly covered containers, away from substances which have strong flavors such as: cheese, detergents, coffee or aromatic flowers.
Note: Honey should not be given to children up to 1 year
