Honey is an easely digestible food. Containing a balanced mixture of fructose and glucose, it represents a powerfull source of energy, being assimilated directly, without any altering from human organism. Honey contains:
1. water ("biological" water obtained from plants) - the normal concentration of water in honey is between 17-23 %
2. glucose (65-75%)
3. pollen (to a maximum of 1%)
4. vitamins, aminoacids or proteins the presence of proteins, even in very small amounts, can explain intolerance (or allergies) towards honey
5. minerals in small amounts
6. enzymes (added mostly by bees)
7. different acids (thus sugesting honey to having a slightly acid pH)
100 grams of honey, wich supplies with 335 calories, contains
15 % water, 0,4% proteins, 81,3 % sugars, 3,01 % vitamins (B1, B2, B6, C, K), 0,2% mineral substances (calcium, magnesium, phosphorous, iron, others) and antioxidants and antibiotic agents.
